Healthy Vegetarian Breakfast



I'm no vegetarian but I tried this breakfast this morning and it was fantastic. I'm always looking for low carb, healthy recipes and my favorite Instagram account to follow is @mindovermunch. This particular recipe is a mushroom egg bake. I made stuffed mushrooms last night and I had a ton left over. So I chopped the rest (you can use 8 or 9oz) and sautéed them in 1 tsp olive oil.

Then I added 2 tsp chopped garlic and cooked for 5 minutes.  Season with salt, pepper, tyme and cook for two more minutes.

Preheat your oven to 400 degrees.  Transfer mushrooms to a baking dish. Crack two eggs on top of the mushrooms. Drizzle some milk on top and add a sprinkle of gruyere cheese. All I had was a five Italian blend cheese which worked just fine. Bake for 10-12 minutes.

1 bake equals 276 calories-only 14gcarbs- 15g fat-and a whopping 20g protein.
